Ginger Bug is one of our favourite fermented drinks to make because it's so easy. It's super punchy in flavour and only uses 2 ingredients - ginger and sugar.

Ingredients for 1 quart/1 litre size jar
3 cups of filtered water
3 teaspoons of raw sugar, coconut sugar or rapadura sugar
3 teaspoons of grated ginger
Instructions
Combine all ingredients in a mason jar
Give everything a good stir, cover with a muslin cloth and secure with some string.
Allow to sit in a warm spot out of direct sunlight.
Everyday for the next week add 2 more teaspoons of sugar and grated ginger.
The liquid will begin to get bubbly towards the end of the week.
Once it's bubbly give it a taste. If it's too sweet leave it to ferment for a day or two.
When the taste is to your liking strain out the ginger and drink it as is or dilute with soda water.
NOTES:
You can use this ginger bug for a second ferment flavour for your water kefir. Add about 1/2 cup in and leave to ferment for around 24 hours.
