These gummies are super simple to make and make the perfect snack for little ones. They are made with coconut yoghurt but you can substitute regular dairy yoghurt or milk kefir. You can also swap the blueberries for strawberries, raspberries or a combination of them all.
Ingredients
1 cup yoghurt or milk kefir
1 cup milk of choice (I used coconut)
1/2 cup blueberries (fresh or frozen)
3 tablespoons gelatin powder
1 tablespoon honey
Instructions
Lightly grease moulds/ramekins or container of choice (I used silicon cup cake moulds) with a non solidifying oil like macadamia oil.
Place blueberries, coconut milk and honey into a blender and blend until smooth.
Pour mixture into a medium saucepan, sprinkle over gelatin and leave to bloom (this should only take a minute or two).
Stir over a low to medium heat to gently dissolve the gelatin.
Once gelatin is dissolved take off heat and whisk through yoghurt.
Pour into moulds and place in fridge for a couple of hours or until set.
NOTES
To make these jellies more vibrant in colour increase the amount of blueberries to 1 cup (I used 1/2 cup).
